Is there some way of verifying that it’s overriding the wireless?

Because mine does the cut out problem whether I have it plugged in or not, that’s why I’m skeptical that car play is still going over Wi-Fi/Bluetooth and it’s just charging via cable.

Turn off your phones wifi and bluetooth and see what happens.

Well boys, I figured out how to force it to use the wire for apple car play. Go to Bluetooth>little “i” next to connection to your truck> toggle off car play

has anyone figured out a way to force it to use wired (usb c) car play vs. wireless?

Yes,
Go to your iphone carPlay settings and "Forget This Car" and on the truck remove your phone completely.

Now, connect your iphone to the truck using the USB cable. Your phone and car should communicate automatically as you open CarPlay on the truck.
Then Your phone will ask if you want to allow use of CarPlay when your phone is locked. Tap Allow. The next menu asks if you want to Enable Wireless CarPlay. Tap Use USB Only.

FWIW, there are no issues with the android phones...
